How To Properly Cook A Stuffed Turkey On Your Gas Grill

As Thanksgiving approaches our thoughts naturally turn to idea of serving a traditional turkey dinner with all the trimmings. Tradition is great, but this year, why not try something just a little different. Perhaps this year is the time to create a new tradition by adding a little twist to the normal fare.

If you own a gas grill, consider cooking your turkey on the grill this year. It's really pretty simple to do On top of that, it frees up your regular oven giving you lots of room to prepare the rest of your holiday feast.

Always keep the size of your grill in mind when shopping for your turkey. Be sure you don't get one that's too big to fit. Ideally, the turkey should be able to sit on the grill rack and you should be able to close the lid completely without it touching the bird If you accidentally got one that's too large - don't worry, you can still grill it You'll just need to prop open the top of the grill so it does touch the turkey and then cover the gap with some heavy aluminum foil.

Prepare and stuff the turkey in the regular way. Put it in a sturdy tray - I prefer a disposal aluminum pan when grilling. Place it on the grill over a burner that can be turned off. You'll leave the other burners on, but you want to cook the turkey using indirect heat, not directly over a flame.

If you'd like to infuse your turkey with a smokey taste, then you'll need to get some wood chips. Most likely you'll be able to find that at any store that sells either grills or grill accessories. Read the instructions that come with the wood chips about how long to soak them in water. You can purchase a special metal tray made for using wood chips or you can simply put them in some aluminum foil. As they dry out they release flavored smoke that infuses the turkey. Position the tray with the soaked wood chips directly over one of the lit burners.

Now, completely close the grill lid. If you're not able to close it fully without touching the turkey, then prop the lid open and cover the gap with heavy aluminum foil If you need to do this, you'll probably need to add some cooking time as some of the heat will escape. However, the foil should help to keep the flavored smoke in.

Cooking time will vary, of course, based on the size of the turkey, whether or not you've stuffed it and whether or not you've been able to close the lid of the grill completely. Turn the turn 180 degrees after a couple of hours of cooking to ensure it's cooking evenly.

For safety sake, as you would with any poultry, cook until the internal temperature reaches at last 160 degrees F. It's best not to guess, so invest in a meat thermometer to be certain Undercooked poultry is dangerous to your health.

Your fully cooked turkey should be nicely browned and when you poke the thigh with a fork or skewer the juices should run clear. Try glazing the turkey before you carve it. You might even want to add a little barbecue sauce to your traditional cranberry sauce recipe. Don't be afraid to experiment and, possibly, start a whole new tradition.
